Transglutaminase 5 (TGase 5) Product Description
TGase 5 is a calcium-dependent acyltransferase with a molecular weight of approximately 38 kDa, composed of 331 amino acids. Its N-terminus undergoes acetylation modification, enabling it to catalyze covalent cross-linking between glutamine residues and lysine ε-amino groups within or between protein molecules, forming stable ε-(γ-Glu)-Lys isopeptide bonds. This enzyme is produced through space mutagenesis of microbial strains and microbial fermentation, followed by separation and purification to obtain a high-activity enzyme preparation. It exhibits pH stability (5.0-8.0) and thermal stability (42-57°C).
In the food industry, TGase 5 is used for reassembling minced meat, enhancing fish paste gel strength, optimizing dairy product structure, and improving the elasticity of flour-based products. In the biomedical field, it serves as a key tool for studying skin differentiation, cytoskeletal cross-linking, and autoimmune diseases (such as celiac disease).
